Good Eats: Peanut Butter and Jelly Smoothie

A smoothie?  That tastes like PB&J?

But it’s true.  I couldn’t believe it when I first tried it either.  The flavors are very distinct and I didn’t have to worry about the added sugar or bread.  Unless you’re a true lover of PB&J, I wouldn’t suggest indulging in this smoothie’s greatness.  It is JUST that similar.

1 tablespoon of Peanut Butter (or Almond Butter)
1/4 teaspoon of Vanilla Extract
1.5 cups of Almond Milk
1 medium size Banana
Handful of Strawberries
Handful of Blueberries (Optional)
A couple of ice cubes 
Add all ingredients into blender and blend until smooth.  Serve and enjoy!
I was a bit surprised to taste it and actually feel like I had just taken a bite out of a freshly prepared PB&J.  My berries are very ripe so the taste really mimicked the jelly taste (and since they were ripe, I added them to the smoothie to not allow them to go bad).  I thought about adding a green, but I didn’t want to throw off the integrity of this smoothie.  I would even contemplate using this smoothie as a meal substitute.
