Trader Joe’s Inspired Chunky, Homemade Paleo Salsa

It’s safe to say I am addicted to the Trader Joe’s Fresh Salsa.  Typically I eat it all in one sitting and that’s not good for the extra chips, veggies, omelets, etc. that don’t get blessed with the salsa  sent straight from heaven.  

This is why it pays to be able to read … in this case, read labels.  I read the label on the container and decided to make my own version of the salsa so that I can have it in BULK and I never have to worry about buying it per container ever again.
What you’ll need for 3 cups of this deliciousness – 

2 medium sized tomatoes, diced
1/2 a green bell pepper, diced
2 small white onions, diced
2 cloves of garlic, diced
2 tablespoons of apple cider vinegar
1 1/2 tablespoon of lemon juice
cilantro (roughly chopped; quantity to your liking)
1 teaspoon salt (or to your liking)
Dash of black pepper (optional)
1 whole jalapeño, diced (optional)
Mix all ingredients together in a container large enough to fit 3 cups of salsa.
Annnnnnnndddddd… you’re done.  You can eat immediately, but I like for mine to sit for an hour or two so that the flavors blend together.  This is a chunky salsa so some of the pieces will be large, but you have the option to dice it smaller if you’d like.
As stated before, I use this salsa on just about every – chips, veggies, omelets, salads, pizza, burritos… whatever!

    I’m sorry to hear you’re freezing your toes off at home. It’s 82 degrees here today. The flip side: we get 100+ summers. Yuck.
